This isn’t a recipe or foodie type blog. My recipes aren’t unique and my pictures sure aren’t beautiful visual masterpieces. This isn’t a diet blog either. At least it’s not one that will tell you what to eat so you can lose weight.
This blog was actually started for my mother and all the other type 2 diabetics in my family. And there are a lot of them! Its main purpose is to show them that following a low carb diet to help maintain better blood sugar levels doesn’t mean you have to miss out on eating delicious foods. I’d love for them to avoid all the horrible side effects that uncontrolled blood sugar levels can cause.
This blog is also to help point out things that people perhaps have never thought of before (ex: but the package says it’s diabetic candy…that means that I can eat it and it won’t affect my blood sugar right?) and, hopefully, put it in a way that’s easy to understand.
This blog isn’t ONLY for type 2 diabetics. It’s for the prediabetics who don’t want to become a type 2 diabetic. And, yes, it’s for anyone who has ever tried to lose weight my eating “healthy” low fat, low calorie diets only to find that the expected weight loss never really happens. It’s basically for anyone who wants to find a better way of eating without making themselves crazy.
As I’ve previously mentioned, my family has many type 2 diabetics. I was on the road to becoming one myself having spent the majority of my life greatly overweight, having gestational diabetes twice and fasting blood sugars that were moving out of the normal range. I’ve maintained a 130 lb weight loss for over 7 years by following a low/lower carb diet. I’ve gone from high risk to low risk for diabetes.
After spending over 18 years working as nurse in the long term care/hospice setting and seeing what years of poorly controlled and uncontrolled blood sugars do I’m doing all I can to avoid becoming a type 2 diabetic. I’ve recently returned to college to earn a degree in nutrition and will become a registered dietitian in the future. My hope is to spread the word on how low carb eating can help improve your health.
